    Hyderabadi Biryani is a delicacy with an ethnic touch attempting to recreate the cultural ethos of a bygone era. A dish fit for the royal with a sophisticated blend of ingredients and technique, have been time and again experimented to utmost perfection. The mouth watering Shahi-Cuisine under the Mughalai influence has grown to be an all time favourite for one and all.

    Hyderabadi Biryani, a top of the mind recall at the instance of Hyderabad and its special cuisine, was introduced to the world at large, through the Nizam’s kitchen. The dish has all the way come from Persia to Hyderabad during the reign of the Deccan dynasty with the word itself tracing its genesis to Persia. Over the days, it has transformed itself from being an ordinary fried rice affair to a concoction of mutton and spices. So, for the dish to be called Hyderabadi it has to be prepared in the Hyderabadi ishtyle!

    Kachi Akhni
    , raw meat and half cooked rice blended together, with the right blend of spices and fat is simmered over a slow fire, preferably that of charcoal in the typical Persian style with special emphasis on the delicate flavours. Cooked with a lid locked with cloth or kneaded flour to seal the aroma, the delicacy, Dum ki Biryani as it is otherwise called, is one of its kinds to capture ones senses.

    You needn’t be surprised to find today’s youth eagerly trying to build their appetite strong as they wait for a sumptuous meal of the delicacy.
